Ingredients
  

Mascarpone Filling
  • 4 oz mascarpone cheese softened and patted dry
  • 2 tbsp unsalted butter softened
  • 1 cup powdered sugar sifted
  • 1 tsp vanilla extract
  • 1-2 tsp coffee liqueur or rum optional
Coffee Crinkle Dough
  • 2 cups all-purpose flour
  • 0.5 cup Dutch-processed cocoa powder
  • 1 tsp baking soda
  • 0.5 tsp kosher salt
  • 1 tsp espresso powder fine-grind
  • 2 tsp instant coffee granules crushed into powder
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar packed
  • 1 egg large
  • 1 tsp vanilla extract
Rolling and Dusting
  • 0.5 cup unsweetened cocoa powder for rolling and dusting
  • 1 cup powdered sugar sifted, for rolling

Method
 

  1. Make the Filling: Cream butter and powdered sugar. Mix in mascarpone, vanilla, and optional liqueur until smooth. Pipe 24 dollops (1 tsp each) onto parchment and freeze until firm (at least 20 min).
  2. In a medium bowl, whisk together all dry dough ingredients (flour, cocoa, baking soda, salt, espresso powder, crushed instant coffee). Set aside.
  3. Cream butter and sugar until light and fluffy. Mix in egg and vanilla.
  4. Gradually add the dry ingredients to the wet, mixing only until combined. The dough will be thick.
  5. Chill the dough for at_least_ 30 minutes in the refrigerator.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Place cocoa and powdered sugar in separate shallow bowls.
  7. Form cookies: flatten 1.5 tbsp of dough, place a frozen mascarpone dollop in the center, and carefully seal the dough completely around it, checking for cracks.
  8. Immediately roll the formed ball heavily first in cocoa powder, then heavily in powdered sugar. Space 2 inches apart on the baking sheets.
  9. Bake for 9-11 minutes until crackled dramatically and edges are set, but the center still looks slightly soft.
  10. Immediately dust the hot cookies with more cocoa powder using a sieve. Cool completely on the sheet for 15 minutes before moving. Serve completely cooled.

Notes

Ensure the dough completely seals the frozen filling, as any gaps will lead to leaks. Use Dutch-processed cocoa and espresso powder for authentic flavor. Serve cold for the best filling stability.
