Ingredients
  

For the Toast
  • 1 long baguette sliced into 3/4-inch rounds
  • 0.5 cup extra virgin olive oil divided
  • 2 large garlic cloves 1 whole for rubbing, 1 minced for topping
For the Topping
  • 4 medium ripe tomatoes seeded and roughly diced
  • 0.5 cup fresh basil leaves roughly chopped
  • 1 tbsp balsamic glaze optional
  • Coarse sea salt to taste
  • Freshly ground black pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C). Brush baguette slices with 1/4 cup olive oil and bake for 5-7 minutes until lightly golden and crisp.
  2. Immediately upon removing, rub the warm bread surfaces with the whole garlic clove to infuse with flavor.
  3. In a bowl, combine diced tomatoes, minced garlic, remaining 1/4 cup olive oil, chopped basil, and optional balsamic glaze. Season well with salt and pepper.
  4. Let the topping marinate at room temperature for 15 minutes to allow flavors to meld.
  5. Arrange the toasted bread slices in a circular wreath pattern on your serving board.
  6. Just before serving, spoon the tomato mixture generously over the bread in the center of the wreath. Sprinkle with extra basil and sea salt.

Notes

Do not top the bread more than 30 minutes before serving to maintain crispness. Use high-quality olive oil and fresh ingredients for best results.
