Ingredients
  

Slaw Base
  • 2 large mangoes semi-ripe, julienned
  • 3 cups red cabbage thinly shredded
  • 1 large red bell pepper julienned
  • 0.5 medium red onion thinly sliced
  • 1 jalapeño minced (seeds removed for less heat)
  • 0.5 cup fresh cilantro chopped
Lime Vinaigrette
  • 0.25 cup lime juice freshly squeezed
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey or maple syrup
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Peel mangoes and cut into thin matchstick strips (julienne).
  2. Shred red cabbage and thinly slice the red onion and bell pepper.
  3. Finely mince the jalapeño and chop the cilantro.
  4. In a small bowl, whisk lime juice, olive oil, honey, salt, and pepper until emulsified.
  5. Combine all vegetables and mango in a large bowl.
  6. Pour dressing over the slaw and toss well to coat.
  7. Let stand for 15 minutes before serving to allow flavors to meld.

Notes

For best results, use mangoes that are firm but yielding slightly to touch. Mushy mangoes will disintegrate.
