A homemade cookie version of the famous candy bar. Buttery shortbread topped with chewy caramel and smooth milk chocolate.

Ingredients
  

Shortbread Base
  • 1 cup unsalted butter softened
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract
  • 2.25 cups all-purpose flour
  • 0.25 tsp salt
Caramel Layer
  • 11 oz soft caramels unwrapped
  • 1 tbsp heavy cream
Chocolate Layer
  • 1.5 cups milk chocolate chips
  • 1 tsp vegetable shortening or coconut oil

Equipment

  • Baking sheets
  • Stand mixer or hand mixer
  • Rolling pin
  • Round cookie cutter

Method
 

  1. Preheat oven to 350°F (175°C). Cream butter and powdered sugar until fluffy. Add vanilla, flour, and salt. Mix until dough forms.
  2. Roll dough on a floured surface to 1/4 inch thickness. Cut into circles and place on baking sheet.
  3. Bake for 8-10 minutes until set but not browned. Cool completely.
  4. Melt caramels and cream in microwave until smooth. Spoon onto cooled cookies and spread slightly.
  5. Let caramel set for 15 minutes.
  6. Melt chocolate chips and shortening until smooth. Spoon over the caramel layer.
  7. Let chocolate set completely before serving.

Notes

Use powdered sugar for the shortbread to get a melt-in-your-mouth texture rather than a crunchy one.
