Ingredients
  

Hot Toppings
  • 1 lb ground beef (80/20)
  • 1 packet taco seasoning
  • 0.25 cup water
  • 1 can black beans (15 oz) rinsed and drained
  • 1 bag thick-cut tortilla chips (16 oz)
  • 3 cups shredded Mexican cheese blend thick, gooey melt
Cold Toppings
  • 1 cup diced tomatoes or pico de gallo
  • 0.5 cup chopped cilantro
  • 1 cup guacamole thick, heavy consistency
  • 1 cup sour cream thick, gooey consistency
  • Sliced jalapeƱos optional

  • Large rimmed baking sheet
  • Large skillet

Method
 

  1. Preheat oven to 400 degrees F (200 degrees C). Line a large baking sheet with parchment paper.
  2. In a large skillet, brown the ground beef. Drain fat. Add taco seasoning and water, simmer for 3-4 minutes until thick.
  3. Spread tortilla chips in a single, uneven layer on the baking sheet.
  4. Sprinkle half the shredded cheese over the chips, creating a protective layer.
  5. Top with the seasoned ground beef and rinsed black beans.
  6. Sprinkle the remaining cheese over everything.
  7. Bake for 10-15 minutes, until the cheese is melted, bubbly, thick, and gooey.
  8. Remove from oven. Top with a lopsided, heavy dollop of guacamole, a gooey dollop of sour cream, diced tomatoes, and cilantro.
  9. Serve immediately.

Notes

Use thick-cut chips to prevent sogginess. Shredding your own cheese creates a gooier, more viscous melt. Serve immediately for best results.
