Ingredients
  

Shortbread Base
  • 1 cup unsalted butter softened
  • 0.66 cup powdered sugar (2/3 cup)
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 0.25 tsp salt
Caramel Layer
  • 0.5 cup butter
  • 0.5 cup brown sugar packed
  • 0.5 cup sweetened condensed milk
  • 2 tbsp corn syrup
Topping
  • 2 cups milk chocolate chips
  • 1 tbsp vegetable oil
  • 1 tsp flaky sea salt optional

Equipment

  • Baking sheets
  • Stand mixer or hand mixer
  • Saucepan
  • Round cookie cutter

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter and powdered sugar until smooth. Add vanilla, flour, and salt; mix until dough forms.
  3. Roll dough to 1/4 inch thick and cut into circles. Bake 10-12 minutes. Cool completely.
  4. In a saucepan, cook butter, brown sugar, condensed milk, and corn syrup. Simmer 5-8 minutes until thickened.
  5. Spoon warm caramel onto cooled cookies. Let set until firm.
  6. Melt chocolate chips with oil in microwave until smooth.
  7. Spread chocolate over set caramel. Sprinkle with sea salt if desired.
  8. Let chocolate set completely before serving.

Notes

Ensure caramel is cooked long enough to hold its shape but not so long it becomes hard toffee. Total time includes cooling/setting time.
