- Preheat your mini waffle maker or standard waffle iron. Set a wire cooling rack nearby.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and 1 cup of granulated sugar until light and fluffy (about 2-3 minutes).
- Add the eggs one at a time, mixing well after each. Stir in the vanilla extract.
- Gradually mix the dry flour mixture into the wet ingredients until just combined. Do not overmix.
- Scoop out 1 tablespoon of dough and roll it into a ball. Roll the ball in the remaining 1/2 cup of granulated sugar to coat.
- Place the sugar-coated dough ball in the center of the preheated waffle iron. Close the lid gently.
- Cook for 1 1/2 to 2 minutes, or until the cookie is golden brown and set.
- Carefully remove the fragile cookie with a fork and place it on the wire rack to cool and crisp up. Repeat with remaining dough.
Notes
Store in an airtight container at room temperature for up to a week. Dough balls can be frozen for up to 3 months.
