Ingredients
  

The Burger Stack
  • 2 large yellow onions peeled and sliced into thick rounds
  • 1 lb ground beef 80/20 lean to fat ratio
  • 4 slices American cheese
  • 2 tbsp yellow mustard
  • 1 tbsp oil for frying
  • 1 tbsp butter unsalted
  • 1 tsp salt
  • 0.5 tsp black pepper
Secret Sauce
  • 0.5 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp sweet relish
  • 1 tsp vinegar white or cider
  • 1 tbsp fresh chives finely chopped

Method
 

  1. Prepare the sauce by mixing mayonnaise, ketchup, relish, vinegar, and chives in a small bowl. Refrigerate until ready to use.
  2. Slice the ends off the onions and peel them. Cut two thick (approx. 1/2 inch) slices from the center of each onion.
  3. Heat oil and butter in a skillet over medium heat. Add onion slices, season with salt/pepper, and cook 5-7 minutes per side until deeply caramelized but structurally intact. Remove and set aside.
  4. Form ground beef into 4 equal balls. Place in the hot skillet and smash flat into thin patties.
  5. Spread a thin layer of mustard on the raw side of the patties. Cook for 2-3 minutes until bottom is seared.
  6. Flip patties. Place a slice of cheese on each patty immediately. Stack one patty onto another to create double cheeseburgers.
  7. To assemble, place a grilled onion slice on a plate. Top with the double patty stack. Generously drizzle with special sauce. Top with the second onion slice.
  8. Serve immediately with plenty of napkins.

Notes

Handle the onion slices gently to prevent the rings from separating. If you are struggling, use a toothpick to secure them while flipping.
