Whipped Edamame & Feta Dip

Ingredients
  

Dip Base
  • 1.5 cups frozen shelled edamame mukimame
  • 8 oz feta cheese in brine, drained and crumbled
  • 0.25 cup extra virgin olive oil plus extra for garnish
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic peeled
  • 0.25 cup fresh cilantro or parsley loosely packed
  • 2-3 tbsp ice water as needed
  • 0.5 tsp kosher salt adjust to taste
  • 0.25 tsp black pepper freshly ground
Optional Garnishes
  • 1 tsp toasted sesame seeds
  • 1 pinch crushed red pepper flakes

Equipment

Method
 

  1. Bring a small pot of water to a boil. Add frozen edamame and boil for 3-5 minutes until tender and bright green.
  2. Drain edamame and rinse under cold water or plunge into an ice bath to cool completely. Drain well.
  3. In a food processor, add the peeled garlic cloves and pulse until finely minced.
  4. Add the cooled edamame, crumbled feta, lemon juice, cilantro, salt, and pepper to the food processor. Process for 1-2 minutes, scraping down sides as needed.
  5. With the processor running on low, slowly stream in the olive oil. Increase speed to high and process for 2 minutes.
  6. If the dip is too thick or grainy, add ice water 1 tablespoon at a time, processing until light, fluffy, and perfectly creamy.
  7. Transfer to a serving bowl, create swirls with a spoon, and garnish with olive oil, sesame seeds, and red pepper flakes. Serve with pita or vegetables.

Notes

Use a block of feta in brine rather than pre-crumbled feta for the creamiest texture.
