Method
- Roughly chop the fresh spinach. If using large leaves, ensure stems are removed.
- In a large bowl, combine ground chicken, chopped spinach, cubed white cheddar, minced garlic, shallots, salt, and pepper.
- Gently mix with your hands until ingredients are evenly distributed. Do not overmix to avoid tough burgers.
- Divide the mixture into 4 equal portions and shape into patties about 3/4 inch thick. Press a small indent in the center of each.
- Heat olive oil in a large skillet over medium-high heat (or preheat grill).
- Cook patties for 5-6 minutes per side, or until golden brown and internal temperature reaches 165°F (74°C).
- While burgers cook, brush cut sides of brioche buns with melted butter and toast in a separate pan until golden.
- Assemble burgers with toasted buns, your favorite sauce, and the cooked patties. Serve immediately.
Notes
Wet your hands with water or oil before shaping the patties to prevent the chicken from sticking to your skin.
