- Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar on medium speed until light and fluffy (about 2-3 minutes).
- Add the egg, vanilla extract, and peppermint extract. Mix until well combined, scraping down the sides of the bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- Gently fold in the white chocolate chips and crushed candy canes.
- Scoop dough into rounded tablespoons and place on prepared baking sheets, spacing them 2 inches apart.
- Bake for 9-11 minutes, or until edges are set and lightly golden but centers still look soft. Do not overbake.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Chill the dough for 30 minutes before baking for a thicker cookie.
