White Chocolate Cranberry Pistachio Cookies

Ingredients
  

Dry Ingredients
  • 2 1/4 cups all-purpose flour spooned and leveled
  • 1 tsp baking soda
  • 1/2 tsp salt
Wet Ingredients
  • 3/4 cup unsalted butter softened to room temperature (1.5 sticks)
  • 3/4 cup brown sugar packed (light or dark)
  • 1/2 cup granulated white sugar
  • 1 large egg room temperature
  • 2 tsp vanilla extract
Mix-ins
  • 1 cup white chocolate chips high quality
  • 3/4 cup dried cranberries sweetened
  • 1/2 cup shelled pistachios roasted, lightly salted, and roughly chopped

Method
 

  1. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  2. In a large bowl using an electric mixer, cream the softened butter, brown sugar, and granulated white sugar together on medium-high speed until light, fluffy, and pale in color (about 2-3 minutes).
  3. Add the room-temperature egg and vanilla extract to the butter mixture. Beat on medium speed until well combined.
  4. Turn the mixer to low speed and gradually add the dry flour mixture to the wet ingredients. Mix just until the flour disappears. Do not overmix.
  5. Using a spatula, gently fold in the white chocolate chips, dried cranberries, and chopped pistachios until evenly distributed.
  6. Cover the dough tightly with plastic wrap and chill in the refrigerator for at least 1 hour (or up to overnight) to prevent cookies from spreading too much.
  7. Preheat oven to 350°F (175°C). Line large baking sheets with parchment paper or silicone baking mats.
  8. Scoop 1.5 to 2 tablespoons of dough per cookie, roll into balls, and place 2 inches apart on the prepared baking sheets. (Optional: press extra chips, cranberries, and nuts on top for presentation).
  9. Bake for 10-12 minutes, or until the edges are lightly golden but the centers are still soft and slightly underbaked.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Freezing Unbaked Dough: Scoop dough into balls and freeze on a baking sheet until solid. Transfer to a zip-top bag and freeze for up to 3 months. Bake straight from frozen, adding 1-2 extra minutes to the bake time.
