Method
- Cream butter and brown sugar together until light and fluffy.
- Beat in egg yolk, maple syrup, vanilla, and maple extract.
- Whisk flour, baking soda, salt, and cinnamon; gradually add to wet ingredients.
- Chill the dough in the refrigerator for at least 1 hour.
- Preheat oven to 350°F (175°C). Roll dough into balls and place on lined baking sheets.
- Bake for 10-12 minutes. Cool completely on wire racks.
- Melt white chocolate with coconut oil. Dip half of each cookie.
- Sprinkle with sea salt and let set before serving.
