Ingredients
  

Base
  • 2 cups cooked white rice Jasmine or Basmati
Buffalo Chicken
  • 1 lb chicken breast cubed
  • 0.5 cup buffalo sauce Frank's RedHot style
  • 1 tbsp honey optional
  • 1 tsp garlic powder
  • 1 tbsp olive oil
Toppings
  • 1 cup cherry tomatoes whole
  • 1 large avocado sliced
  • 0.5 cup cheddar cheese shredded
  • 0.25 cup ranch dressing or blue cheese
  • 2 stalks green onions chopped

Equipment

  • Large skillet
  • Small pot (for rice)
  • Chef's knife
  • Cutting board

Method
 

  1. Cook rice according to package instructions and set aside.
  2. In a small skillet with a drop of oil, roast cherry tomatoes over medium heat until skins blister (3-4 mins).
  3. Cut chicken into cubes and season with salt, pepper, and garlic powder.
  4. Sear chicken in olive oil over medium-high heat for 5-6 minutes until browned and cooked through.
  5. Lower heat, add buffalo sauce and honey to chicken, and toss to coat.
  6. Assemble bowls: Rice at the bottom, topped with sections of chicken, tomatoes, avocado, and cheese.
  7. Drizzle with ranch dressing and garnish with green onions.

Notes

Store components separately for meal prep. Add avocado fresh before serving to prevent browning.
