Ingredients
  

Crust & Crumble
  • 1.5 cups all-purpose flour
  • 1.5 cups old-fashioned rolled oats
  • 1 cup brown sugar packed
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.75 cup unsalted butter melted
Cranberry Filling
  • 3 cups fresh or frozen cranberries
  • 0.75 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp orange zest
  • 1 tbsp orange juice
Glaze
  • 0.5 cup powdered sugar
  • 1 tbsp heavy cream or milk
  • 0.5 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, combine cranberries, granulated sugar, cornstarch, orange zest, and orange juice. Toss well to coat and set aside.
  3. In a large bowl, mix melted butter and brown sugar until smooth. Add flour, oats, baking powder, and salt. Stir until a crumbly dough forms.
  4. Reserve 1 cup of the oat mixture for the topping. Press the remaining mixture firmly into the bottom of the prepared pan to form an even crust.
  5. Spread the cranberry mixture evenly over the crust. Sprinkle the reserved crumble topping over the fruit layer.
  6. Bake for 40-50 minutes, or until the fruit is bubbling and the topping is golden brown.
  7. Remove from oven and cool completely on a wire rack.
  8. Whisk together powdered sugar, vanilla, and cream to make the glaze. Drizzle over cooled bars before cutting into squares.

Notes

Ensure bars are fully cool before cutting to get clean edges.
