Method
- Bake the Sweet Potato Brownie base following steps 1-4 from the Brownie Base section. Allow to cool completely (2+ hours) before cutting into 16 squares.
- Make the Icing: Whisk powdered sugar with 2 tbsp liquid and vanilla until a thick, gooey paste forms. Add more liquid sparingly if needed.
- Divide the icing into small bowls and color them using gel food coloring (green, orange, black, white).
- For Monsters (Frankenstein/Jack-O'-Lantern): Spread the green or orange icing evenly over the brownie surface. Let set for 15 minutes.
- For Mummies/Spiderwebs: Use white icing for the mummy base or web background. Pipe thin lines of white (mummy) or black (web) icing for the details.
- Affix candy eyes using a small dot of icing. Use black icing in a piping bag to draw mouths, hair, or spider legs.
- Let the decorated brownies sit at room temperature for at least 30 minutes for the icing to set before serving or packaging.
Notes
The consistency of the icing must be thick enough to hold its shape. Use a toothpick or fine piping tip for detail work. Store in an airtight container at room temperature.
