Ingredients
  

Salad Base
  • 2 cups cooked chicken breast shredded
  • 1 cup celery finely diced
  • 1 cup red grapes halved
  • 0.25 cup green onions sliced
High Protein Dressing
  • 1 cup cottage cheese 4% fat recommended
  • 1 tsp Dijon mustard
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tbsp lemon juice freshly squeezed
  • 1 pinch salt and black pepper to taste

Equipment

  • Large mixing bowl
  • Blender or Food Processor
  • Forks for shredding
  • Knife and Cutting Board

Method
 

  1. If not already cooked, poach chicken breasts in boiling water for 20 minutes until fully cooked (165°F), then shred with forks.
  2. Wash and chop the celery, slice the grapes in half, and thinly slice the green onions.
  3. For a smooth consistency, place the cottage cheese in a blender and pulse until creamy and lump-free. (Optional step)
  4. In a large bowl, whisk together the cottage cheese, Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper.
  5. Add the shredded chicken, celery, grapes, and onions to the bowl.
  6. Toss well until all ingredients are evenly coated in the creamy dressing.
  7. Taste and adjust seasoning if needed. Serve immediately or chill for 30 minutes for better flavor development.

Notes

Store in an airtight container in the fridge for up to 4 days. Do not freeze.
