Ingredients
  

Sweet Focaccia Dough
  • 0.75 cup warm water 105-115°F
  • 0.25 cup granulated sugar divided
  • 2.25 tsp active dry yeast 1 envelope
  • 3 cups bread flour or all-purpose
  • 1 tsp salt
  • 1 egg large, lightly beaten
  • 0.25 cup unsalted butter melted and cooled slightly
  • 1 tsp vanilla extract
Pan Prep and Topping
  • 0.25 cup unsalted butter softened
  • 0.5 cup raspberry or strawberry jam seedless preferred
Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp milk or water
  • 0.5 tsp vanilla extract

Equipment

  • Stand Mixer or Large Bowl
  • Wire cooling rack

Method
 

  1. Combine warm water, 1 tbsp granulated sugar, and active dry yeast. Let sit for 5-10 minutes until foamy.
  2. In a stand mixer, mix bread flour, salt, and remaining sugar. Add yeast mixture, beaten egg, melted butter, and vanilla extract. Knead for 5-7 minutes until smooth and elastic (the dough will be tacky).
  3. Place in an oiled bowl, cover, and let rise in a warm spot for 1 to 1.5 hours until doubled.
  4. Grease a 9x13 pan generously with softened butter. Gently stretch dough to fit the pan. Let rest if it resists.
  5. Cover and let rise for another 45-60 minutes until puffed. Preheat oven to 400°F (200°C).
  6. Dimple the dough deeply with oiled fingers. Fill each well generously with raspberry jam.
  7. Bake for 20-25 minutes until golden brown.
  8. While baking, whisk powdered sugar, milk, and vanilla extract to make a fluid glaze.
  9. Let focaccia cool for 10 minutes, remove from pan to a rack, and pour glaze generously over the warm bread. Serve immediately.

Notes

Bread flour provides the best, most structured chew. Ensure yeast is activated before proceeding. Best eaten warm on the day of baking.
