Old Fashioned Iced Oatmeal Cookies

Ingredients
  

Cookie Dough
  • 2 cups old-fashioned rolled oats pulsed
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1.5 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 1 cup unsalted butter softened
  • 1 cup dark brown sugar packed
  • 0.5 cup granulated sugar
  • 2 eggs large, room temp
  • 1 tbsp vanilla extract
Icing
  • 2 cups powdered sugar sifted
  • 3-4 tbsp milk adjust for consistency
  • 0.5 tsp vanilla extract

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Pulse oats in a food processor 8-10 times until they resemble a coarse flour. Do not grind into fine powder.
  3. In a medium bowl, whisk together pulsed oats, flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a large bowl or stand mixer, cream softened butter, brown sugar, and granulated sugar until light and fluffy (approx. 2-3 mins).
  5. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  6. Gradually mix in the dry ingredients on low speed until just combined. Do not overmix.
  7. Scoop dough (approx 2 tbsp) onto baking sheets, spacing them 2 inches apart.
  8. Bake for 10-12 minutes until edges are golden. Centers may look slightly soft. Cool on pan for 5 minutes, then transfer to wire rack to cool completely.
  9. Whisk powdered sugar, milk, and vanilla until smooth and thick. Dip the tops of cooled cookies into icing or drizzle generously.
  10. Allow icing to set and harden before serving or storing.

Notes

Ensure cookies are 100% cool before icing, otherwise the glaze will melt and become transparent. Store in an airtight container for up to 5 days.
