Ingredients
  

Cabbage Steaks
  • 1 head green cabbage medium size
  • 0.25 cup olive oil or melted butter
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • 0.5 tsp onion powder
  • 1 tbsp lemon juice freshly squeezed
Creamy Dip
  • 0.5 cup mayonnaise or Greek yogurt
  • 1 tbsp Sriracha optional
  • 0.5 tsp garlic powder

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Slice the bottom stem off the cabbage to create a flat base. Slice the cabbage vertically into 1-inch thick steaks.
  3. In a small bowl, mix olive oil, minced garlic, smoked paprika, onion powder, salt, and pepper.
  4. Place cabbage steaks on the baking sheet. Brush generously with the oil mixture on both sides.
  5. Roast for 20-25 minutes until edges are crispy and brown.
  6. Carefully flip the steaks and roast for another 10-15 minutes until the center is tender.
  7. Meanwhile, mix mayonnaise, Sriracha, and garlic powder to create the dip.
  8. Remove cabbage from oven, drizzle with lemon juice, garnish with herbs, and serve with the dip.

Notes

Keep the core intact when slicing to prevent the steaks from falling apart. For extra crunch, sprinkle with parmesan in the last 5 minutes.
