Ingredients
  

Filling
  • 0.5 lb breakfast sausage ground
  • 4 large eggs lightly beaten with salt/pepper
  • 6 slices American or Sharp Cheddar cheese
Pastry
  • 1 package frozen puff pastry 2 sheets, thawed
  • 1 large egg for egg wash, beaten with 1 tbsp water
  • 1 tbsp fresh thyme leaves chopped, for topping
  • 1 pinch flaky sea salt and cracked black pepper for topping

Method
 

  1. Brown sausage in a skillet, breaking into crumbles. Drain excess fat and set sausage aside.
  2. In the same skillet over low heat, soft-scramble the 4 eggs. Remove from heat and let cool completely alongside the sausage.
  3. Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
  4. Roll out puff pastry sheets slightly. Cut each sheet into 6 even rectangles (12 total).
  5. Place 6 rectangles on baking sheets. Top center of each with a cheese slice, scrambled eggs, and sausage crumbles, leaving a border.
  6. Brush borders with egg wash. Place remaining 6 rectangles on top. Crimp edges firmly with a fork to seal.
  7. Brush tops with egg wash. Cut small vent slits in tops. Sprinkle with thyme, salt, and pepper.
  8. Bake for 18-22 minutes until deeply golden brown and puffed. Cool for 10 minutes before serving.

Notes

Ensure filling ingredients are cool before assembling to keep pastry flaky. Do not overfill or they will burst.
