Ingredients
  

Tart Crust (Pâte Sablée)
  • 1.5 cups All-purpose flour
  • 1/2 cup Powdered sugar confectioners' sugar
  • 1/2 tsp Salt
  • 1/2 cup Unsalted butter cold and cubed
  • 1 large Egg yolk
  • 1 tsp Vanilla extract
  • 1-2 tbsp Ice water only if needed
Mango Curd Filling
  • 1 cup Mango puree strained and smooth (from about 2 large Ataulfo mangoes)
  • 3 tbsp Fresh lemon juice
  • 1/2 cup Granulated sugar
  • 2 large Whole eggs
  • 3 large Egg yolks
  • 6 tbsp Unsalted butter cut into pieces, room temperature
Garnish
  • 1 Fresh mango thinly sliced
  • Edible purple flowers violas or orchids
  • Fresh mint leaves

Equipment

  • 9-inch fluted tart pan with removable bottom
  • Food processor
  • Fine-mesh sieve

Method
 

  1. Make the crust: Pulse flour, powdered sugar, and salt in a food processor. Add cold cubed butter and pulse until coarse crumbs form. Add egg yolk and vanilla; pulse until dough comes together. Add ice water if too dry.
  2. Form dough into a disk, wrap in plastic, and chill for at least 1 hour.
  3. Roll out chilled dough and press into a 9-inch tart pan. Prick the bottom with a fork. Freeze for 30 minutes.
  4. Blind bake the crust: Line with parchment, fill with pie weights, and bake at 375°F (190°C) for 15-20 minutes. Remove weights and bake another 10-15 minutes until golden. Let cool.
  5. Make the curd: Whisk mango puree, lemon juice, granulated sugar, whole eggs, and egg yolks in a heatproof bowl set over a pot of gently simmering water.
  6. Cook, whisking constantly, until the mixture thickens and reaches 170°F (77°C), about 10-15 minutes.
  7. Remove from heat and immediately strain through a fine-mesh sieve. Whisk in the softened butter pieces until smooth and emulsified.
  8. Pour the warm curd into the cooled tart shell. Let sit at room temperature for 30 minutes, then refrigerate for at least 4 hours until set.
  9. Before serving, garnish the edges with fresh mango slices, edible flowers, and mint leaves. Slice with a warm, clean knife.

Notes

Ensure you use sweet, non-fibrous mangoes like Ataulfo or Alphonso for the smoothest curd. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Freezing the assembled tart is not recommended.
