Ingredients
  

Crust
  • 1 package chocolate sandwich cookies (Oreos) approx. 36 cookies, regular stuffed
  • 0.5 cup unsalted butter melted
Peanut Butter Layer
  • 8 oz cream cheese softened to room temperature
  • 1 cup creamy peanut butter do not use natural
  • 1 cup powdered sugar
  • 8 oz whipped topping (Cool Whip) thawed (half of a 16oz tub)
Chocolate Layer
  • 2 boxes instant chocolate pudding mix 3.9 oz boxes
  • 3 cups cold milk whole or 2%
Topping & Garnish
  • 8 oz whipped topping (Cool Whip) thawed (remaining half of the tub)
  • 0.5 cup mini chocolate chips
  • 0.25 cup chopped peanuts roasted, unsalted

Equipment

  • 9x13 inch baking dish
  • Food processor or rolling pin
  • Hand mixer or stand mixer

Method
 

  1. Lightly grease a 9x13 inch baking dish. Crush the Oreo cookies into fine crumbs. Set aside 1/2 cup of crumbs for later. Mix the remaining crumbs with melted butter and press firmly into the bottom of the dish. Chill.
  2. In a large bowl, beat the softened cream cheese until smooth. Add the peanut butter and powdered sugar, beating until fluffy. Gently fold in 8 oz of the whipped topping.
  3. Spread the peanut butter mixture evenly over the chilled crust. Sprinkle with 1/4 cup of the reserved Oreo crumbs. Chill while making the next layer.
  4. In a medium bowl, whisk together the instant chocolate pudding mix and cold milk for 2 minutes until thickened. Let sit for 3 minutes.
  5. Spread the thickened pudding evenly over the peanut butter/crumb layer. Chill for 10 minutes to allow the pudding to set.
  6. Spread the remaining 8 oz of whipped topping over the chocolate pudding layer.
  7. Garnish evenly with the remaining 1/4 cup Oreo crumbs, mini chocolate chips, and chopped peanuts.
  8. Cover tightly and refrigerate for at least 4 hours, or preferably overnight, before slicing and serving.

Notes

For the cleanest slices, wipe your knife with a hot, damp cloth between each cut.
