Ingredients

Roux Base
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 3-4 cloves garlic minced
Liquid & Seasoning
  • 1 cup whole milk or half-and-half
  • 0.5 cup Parmesan cheese freshly grated
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp dried oregano
  • 0.5 tsp dried basil

Equipment

  • Small saucepan
  • Whisk
  • Measuring Cups

Method

  1. Melt butter in a saucepan over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Whisk in flour and cook for 1-2 minutes to form a roux, being careful not to brown the garlic.
  3. Slowly pour in milk while whisking constantly to prevent lumps.
  4. Simmer sauce for 3-5 minutes until it becomes thick and viscous.
  5. Remove from heat. Stir in Parmesan cheese, salt, pepper, oregano, and basil until smooth.
  6. Let cool slightly before spreading on pizza dough.

Notes

For a richer sauce, use half-and-half instead of milk. Ensure the cheese is freshly grated for the smoothest melt.
